We're on shared hosting with cPanel.
We have PHP 8.1.
Sorry, don't know our versions of MySQL or PostgreSQL. Not sure I can SSH in as root to check, and unlike PHP version which I can change, I don't think I can change the database versions. (Happy to be corrected on those points.)

Am I right in thinking there should be an 'or' between the different databases, and that Joomla defaults to whichever database is available with a valid version?
You will find your current database specifications in System / Information panel / System Information.

On cPanel shared hosting you do not have a Terminal to login to and you cannot choose a database type or version. Moving from MySQL 5 to 8 involves exporting and importing the tables.

It is possible that your hosting service runs several different servers with different database versions for established and new cPanel clients. You will have to bite this bullet sooner or later so I suggest you ask your hosting service for advice now.
